Recipe of the Week: Sweet Potato Stuffing
Ok, I know that most of the world has full bellies. But after some great reviews at our holiday, I thought I would share this simple gluten-free (and dare I say, healthy) stuffing recipe:
- 2 large sweet potatoes, peeled
- 2 Tbs vegan butter (Earth Balance is a household favorite)
- 1 1/2cups raw onions, chopped
- 1/2 cup celery, diced
- 2 cups apples, chopped
- 1/2 cup water
- 1/2 cup vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper, cinnamon, nutmeg
Heat oven to 350 degrees. Combine all ingredients and pour into a casserole dish. Bake in the oven until sweet potatoes are tender.
