Recipe of the Week: Falafel Pancakes
Oh, the weather outside is frightful… well, actually it’s quite beautiful. Though just a bit more cold than this Mama would prefer! To stay warm this winter, try this quick and easy recipe for the whole family. It’s not only delicious, but makes for a perfectly full belly!
Falafel Pancakes with Sauteed Winter Veggies and Buckwheat
- 1 cup Garbanzo Bean Flour
- 1/2 tsp sea salt
- 1/4 tsp baking soda
- 2 tbsp parsley flakes
- 1 tsp cumin
- 1/2 tsp coriander
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tsp lemon juice
- 1/4 cup ground flax meal
- hot water
Combine all ingredients, adding water until the mixture forms a pancake batter consistency. Heat pan on medium heat with small amount of olive oil to coat the bottom of the pan. Spoon 1-2 tablespoons of batter onto the pan, making sure the pancakes do not touch. Cook until slightly browned and then flip to cook other side. If excess oil, let rest on paper towel when fully cooked.
Serve with cooked buckwheat and sauteed winter vegetables. We made a beautiful medley of Italian squash, large carrots, broccoli, onion, and water chestnut (frozen mixes will do just as well!) sauteed in a bit of vegetable oil, garlic, and lemon juice. Drizzle the entire dish in your own mixture of a these same few ingredients, with a bit of salt and pepper to taste.
