Recipe of the Week: Polenta with White Beans

Quick, easy, delicious. Start the New Year off right with satisfying food that can be prepared within minutes of arriving home in the evening – leaving you time to enjoy love, light, laughter… and life.

Polenta with White Beans (GF & VEGAN)

  • organic polenta (prepackaged)
  • 1 jar oil-free pasta sauce
  • 3 cups frozen mixed vegetables
  • 1 can organic white beans
  • salt and pepper to taste

Combine sauce, vegetables, and white beans. Let simmer for 5-10 minutes, stirring frequently. Heat pan and add 1 tbsp olive oil. Cut polenta into 10 rounds. Add to pan and cook on medium heat for 3-5 minutes per side.
