Every-so-often, I think: Doesn’t everyone know how to eat well by now? After all Dr. Oz airs worldwide.
Then I meet someone who doesn’t know how to eat well (yet). And I nearly jump out of my skin wanting to share tools, tips… a meal with them. Eating well means feeling good. Feeling good is fabulous, and therefore so is food. I love food. Seriously, it’s been made for us – as God or the Universe intended. When we manhandle it (in factories), we’re playing with fire. Someone will always get burned.
As I embark upon the Thrifty Fifty (ways to shift into bliss through self-nurture via food, movement, and mindfulness), I thought there no better time to begin posting some recipes. Just as an FYI, I’ll only be posting really fabulous, feel-good, God-loving pointers on how to eat better, simply. Nothing elaborate here. I hope you’ll let me know what you think! P.S. I’ll start you off with one now…
Kohlrabi Pizza Fries
- 1 large kohlrabi, washed and cut into french fry sized pieces
- 2 medium vine-ripened tomatoes, cut into quarter-sized chunks
- 1/2 package vegan cheese (choose something soy-free like daiya or trader joes brand)
- olive oil
- fresh basil
- smoked paprika
- garlic powder
- sea salt
Combine and roast at 450 degrees until forkable.
