Okay, all you white-potato-naysayers… this one is not for you!
I believe in everything in moderation. Mother Earth knew what seeds she was sewing well before they were sewn. So, when a white potato shows up at my door – what do I do? I invite him in to dinner. And I enjoy every moment!
A white potato (skin on) is a wonderful source of vitamin C (63% of your daily value) and has some pretty good fiber content, with a hefty 6 grams. Add in some coconut oil (riboflavin rocks), nutritional yeast (B12 – yippie!!), some broccoli rabe, and black beans… and dear sir, you’ve got yourself one super de-duper delicious and oh, so good for you meal.
Roasted “Cheesy” Potatoes
- 4 small white potatoes, scrubbed and skin on, cubed
- 1/2 bunch broccoli rabe, chopped
- 1 can black beans
- 1 yellow onion, chopped
- 1 cup nutritional yeast
- 2 tbsp coconut oil
- sea salt and pepper, as needed
Mix well, add to a pan and roast at 450 until the potatoes can be easily speared. Top with fresh chopped vine ripened tomatoes if you’re feeling the love for my favorite plump little fruits. P.S. Kids can hand mix this dish prior roasting! We had a ball.
Tip: You’ll probably have time to do some jumping jacks while it’s in the oven. Have an injury or two? Warrior II – using your muscles, not your joints, is a wonderful way to isometrically strengthen many of those same muscle groups.
