Sweet Comfort Rice Bowl
For those of you who have been following my journey in 2014, I picked a theme on December 31 – Let Love Lead. Thus far, I’ve been able to do just that. But not without reminders. This week, my self-reminder came after a long and sleepless night with a crying and restless teething babe. As if I’m not challenged enough (ha), I welcomed one more thing to my daily walk of love. I’ve challenged myself to think the words “I love you” toward others and myself before I do or say anything.
Yikes. It even sounds challenging, doesn’t it?? But not so much. It has actually been the most simple thing that I have done in a very long time. That’s because when we are in a space of love, everything comes with greater ease.
For a recipe to bring on the love, try simple Sweet Comfort Rice.
- 1 cup white basmati rice
- 1 can white kidney beans
- 2 apples, chopped with skin on
- 1/2 cup golden raisins
- 1 tbsp coconut oil
- 2.5 cups water
- cinnamon and sea salt
- chopped fresh cilantro, optional
Cook on medium heat, stovetop. Top with cinnamon and sea salt. Those feeling firey (think frustrated, angry, impatient, etc.), avoid cinnamon or excess salt. Garnish with chopped cilantro. *all ingredients should be organic
